Easy Vegan School Lunch Ideas Kids Will Love
As hard as it is to believe (it’s only August afterall!) but the kids are headed back to school. That means it’s time to scramble and come up with some new, healthy lunch ideas they’ll not only eat, but love. And if you’re into all things Vegan like we are, packing those lunches each morning might be a bit more challenging. But never fear, here are five (one for everyday of the week) vegan ideas that will keep the morning chaos to a minimum, your kids happy and full during their school day, and you feeling like the best mom or dad on the block.
Monday: Vegan Burritos with Black Bean, Rice and Avocado
Make them for Sunday night dinner and then keep a few extra for lunch the next day. Sure to be a favorite of any plant-based family, these are the perfect addition to a hearty lunch. Kids love the crispy texture that comes from grilling them too. Add some fruit and a few chocolate chips for dessert.
Tuesday: Homemade Vegan and Gluten-Free Pizza Lunchables
No processed lunchables here! Using grain-free flour pizza crusts, little homemade marinara sauce packets, eggplant bacon as pepperoni, and vegan mozzarella make for a healthy alternative the kids will want to eat all week long.
Wednesday: Vegan Cranberry Apple Chickpea Salad
12 simple ingredients combine for the perfect school-day sandwich. Full of flavor and crunch, this high in protein and fiber sandwich is mixed with a simple dressing and yummy when piled on your favorite vegan bread or stuffed in a pita. You can even keep some for yourself and top your favorite salad with it.
Thursday: Greek Hummus with Veggies
Kids will love dipping all their favorite veggies in this delicious greek hummus. Tomatoes, cucumbers, celery, carrots and bell peppers create quite the rainbow in their lunchbox. Include some dried fruit and nut (think almonds and sunflower seeds) mix, and some pretzels.
Friday: Linguini Fini With No-Cook Tomato Sauce
Another dish that is great for dinner and then left over the next day for lunches that features cherry tomatoes, fresh basil and toasted almonds tossed together and simply seasoned with some salt and pepper.
